Avocado Dressing

Avocado Dressing

-1 avocado
-2 cloves garlic
-3 tbsp fresh parsley (also great with basil or whatever fresh herbs you have lying around)
-Juice from half a lemon (or a whole lime)
-1/3 cup olive oil
-2/3 cup water
-Salt & Pepper to taste


Remove skin and seed from avocado and remove the garlic cloves from the shell. Juice the lemon or lime. Combine all ingredients into a blender, food processor, magic bullet or whatever other appliances you have lying around that will smush up stuff!


I keep the dressing in a regular size mason jar with a lid in the fridge. It lasts quite a while, at least a week but usually longer. If it keeps its green colour and doesn’t smell weird it should be good to go. I have not taken food safe either so use your own discretion! 😉
