Mini Tortilla Pizzas, A New Year’s Appetizer

New Year’s Eve is approaching and some of you may be preparing food for your families or for a party with friends. There are many delicious, traditional holiday appetizers that we have all come to expect on nights such as NYE. I wanted to share this recipe that my mom and I came across in the summer as something a little different, but super easy to make. This recipe can also be altered depending on dietary preferences, which we all know has grown to be more and more important in modern times.

Today I will show you how my mom and I made Mini Tortilla Pizzas based from this video she found on Facebook.

Mini Tortilla Pizzas
Serves 15 – 20, 30 minutes or less, 1 spoon

Ingredients:

-1 398ml can of pizza sauce or make your own
-Grated mozzarella cheese (500 grams or to your desire)
-9 tortillas
-Pizza ingredients (whatever you love)
We used:
-10 slices pepperoni
-4 pieces of ham (sliced)
-1 pepper (diced)
-4 large mushrooms (diced)
-1/2 can of pineapple (drained)

Directions:

  1. Preheat oven to 375 F
  2. Prepare your toppings
  3. Cut the torillas into circles using a can (769ml) like a cookie cutter
  4. Spray or oil 3 muffin tins
  5. Place the tortilla cut outs into the muffin tins
  6. Spread pizza sauce in the bottom
  7. Top with cheese
  8. Place in the pizza ingredients, we did pepperoni & mushroom, ham & peppers, pepperoni & peppers, ham & mushroom and ham & pineapple. The possibilities are endless!
  9. Bake for 15 minutes or until toppings are cooked and cheese is melted.

You can probably see how easy this is to adapt to those with specific dietary preferences or allergies. Remove the meat for vegetarian. Use dairy free cheese or no cheese for those who prefer not to have dairy. For a gluten free version, you could use GF corn tortillas, just make sure your meat, sauce, oil & cheese are all also free of gluten. You can check ingredients here. This is really important if your guest has Celiac disease. Even if you think that something can’t have gluten in it, please double check as you’ll leave them feeling awful and risking their health. As for toppings, the sky is the limit! You could use BBQ sauce and top with chicken, or use anything you have leftover in the fridge to avoid waste.
